Collard Greens Pasta
My family makes collard greens pasta noodles every week. The trick is to thinly cut and lightly fry the leaves. Add your favorite keto sauces on top.
- 18 oz Collard Greens (2 batches)
- 1 tbsp Butter (Herb Butter Recipe)
Wash collards. Stack a few leaves and tightly roll them together. Chop very thin (1/8 inch). Stir fry or pan fry in butter on high heat for about (1-2 min). Continuously stir/toss. The collards will be done when they soften and darken with a mild taste. Cook in batches of 2-3.
Lightly frying collards maintains their integrity. Keep them 'al dente,' tender and not mushy.
