Collard Greens Pasta
My family makes these keto veggie noodles every week. The trick is to thinly cut and lightly fry the leaves. Add your favorite keto sauces on top.
- 18 oz Collard Greens (2 batches from the store)
- 1 tbsp Butter (Herb Butter Recipe)
Wash & dry collards. Stack a few leaves & tightly roll them together. Chop very thin (1/8 inch).
Pan fry or stir fry in butter on high heat for about 1-2 minutes. Continuously stir & toss. Cook in batches of 2-3, and not all at once!
The collards will be done when they soften and darken. They will have a mild, pleasant taste.

- Lightly frying collards maintains their integrity. Keep them 'al dente,' tender and not mushy.
