Coconut Water Kefir
I discovered this fermented drink while traveling in Costa Rica. It's a tropical twist on classic water kefir!
- 2 tbsp Cane Sugar
- 1 quart Coconut Water
- Water Kefir Grains
- Quart Jar, Coffee Filter & Rubber Band
- Add Stevia Sweetener to taste
Pour boiling water on jar & lid to sanitize. Mix sugar and coconut water until dissolved. Add water kefir grains. Secure the top with a coffee filter & rubber band (paper towel works too).
Rest for at least 2-3 days. Give time for the bacteria to eat up all that sugar. The drink should taste sour/tangy with little sweetness. Refrigerate in a separate jar for storage. Add stevia for sweetness.
Fizzy Drink: Rest again in a closed jar for 1 day to build up carbonation!
Keto Cooking Tips
- If using water kefir grains for the first time, make a regular mix using only water and sugar.
- Recharge grains in a mixture of regular water after every mix of coconut water. Water kefir grains prefer only water & sugar.
